Quinoa with Yams and Cranberries
- 2 cups cooked quinoa cooled
- 1/2 cup dried cranberries
- 1/3 cup chopped scallion
- 1 cup roasted yams small dice
- 1 tbs orange zest
- 1/4 cup extra virgin olive oil
- salt and pepper to taste
In a large bowl mix all the ingredients. Season with salt and pepper to taste. This makes a great side dish for a number of meals. For a little twist you can add golden raisins, toasted almonds, or roasted pear. Let me know how it turns out.

This sounds good. I like the yam and cranberries combo.
I LOVE dried cranberries.....this looks amazing for a light summer supper. This is on my list to make next week but I am going to use sweet potatoes instead of the yams. ooooh I am so excited...would have NEVER thought to put sweet potatoes/yams into a dish likes this. Definately adding the suggestion of almonds and golden raisins. w/some nice crusty bread this will be divine.
I've just started experimenting with Quinoa. This looks like it might be a fun "party dish". Thanks for the great idea!
One can never have enough recipes for quinoa. I made a quinoa side dish with sun-dried tomatoes recently but hadn't thought of using cranberries. Great idea! I will have to try this.
Lovely and crunchy looking salad, thx for sharing.
