Roasted Parsnip Fries

Roasted Parsnip Fries
  • 5 lg parsnips fry cut
  • 2 tbs extra virgin olive oil
  • 1 tbs minces rosemary
  • salt and pepper to taste

Preheat oven to 350. Toss parsnips with oil, rosemary, salt, and pepper. Roast on top rack for 25 minutes or until golden brown. This has to be one of my favorite recipes. I came up with this recipe for health reasons. Roasting, as we all know, is so much healthier for us than frying. Trust me when I tell you, you will not notice the difference. Your kids will love them as well.

Ive never even SEEN a parsnip. Here in mexico, you dont have much variety. Would you believe me if I told you that we only get to buy white potatoes? No russet or nothing. But I can teach you to cook NOPALES.

There's no match for the potato but when one is getting a little rotund...alternatives like these parsnips are wonderful!

These look really good! Do they have a sweet taste to them? And if so, could you roast them with a bit of cinnamon instead?

Dang, I wish I liked parsnips - no can do - but I guess turnips would work well, like Courtney suggested. Yum!

Serious yumminess! I have only ever tried parsnips in a soup, but they were delish. Rosemary is my absolute favorite herb, too & I love it on fries!

You're really good at roasting vegetables.....I think roasting veggies esp. root vegetables come out fantastic!

Looks great. I love roasting veggies of all kinds. I've got a few parsnips in my garden so by the end of summer I can have home-grown parsnip fries!

I've roasted loads of potatoes, but I had no idea that you could roast parsnips and eat them the same way. I love that you think my kiddo will like them- he probably will!
