- 5 lg parsnips fry cut
- 2 tbs extra virgin olive oil
- 1 tbs minces rosemary
- salt and pepper to taste
Preheat oven to 350. Toss parsnips with oil, rosemary, salt, and pepper. Roast on top rack for 25 minutes or until golden brown. This has to be one of my favorite recipes. I came up with this recipe for health reasons. Roasting, as we all know, is so much healthier for us than frying. Trust me when I tell you, you will not notice the difference. Your kids will love them as well.

i saw that you stopped by and saw my vegan fondant cake-- thanks for the kind words!
these fries look like the perfect accompaniment to my buffalo style tofu i make friday nights!
These look really yummy! I'm not even sure if I've ever had parsnips before. Hmmm . . . you've got me thinking.
I was thinking of doimg this with turnips. Do you think it would work?
Yum. I love roasted parsnips. Think I will have to take a trip to the market this weekend to pick up some for cheap and give this a go. Thanks!
Ive never even SEEN a parsnip. Here in mexico, you dont have much variety. Would you believe me if I told you that we only get to buy white potatoes? No russet or nothing. But I can teach you to cook NOPALES.
There's no match for the potato but when one is getting a little rotund...alternatives like these parsnips are wonderful!
I've never tried parsnips like this. Great idea! I'll have to try them this weekend. Thanks for the great recipe.

These look really good! Do they have a sweet taste to them? And if so, could you roast them with a bit of cinnamon instead?
Dang, I wish I liked parsnips - no can do - but I guess turnips would work well, like Courtney suggested. Yum!
Serious yumminess! I have only ever tried parsnips in a soup, but they were delish. Rosemary is my absolute favorite herb, too & I love it on fries!
What an interesting recipe! Looks really good.
This looks so much better than zucchini fries, and a nice diversion from sweet potato fries. Thanks for the idea/recipe!
I rarely eat parsnips, but this sounds very good. I do believe I have some left over in the fridge as I recently made something with them. A must try.
You're really good at roasting vegetables.....I think roasting veggies esp. root vegetables come out fantastic!
Nice photo btw, looks like thick wedges of FRIED french fries! YUM.
healthy indeed. Great recipe! I love roasted veggies!
Looks great. I love roasting veggies of all kinds. I've got a few parsnips in my garden so by the end of summer I can have home-grown parsnip fries!
I am going to have to try roasted parsnips with rosemary.
oh this looks very delish!!
This is wonderful...I love eating roasted parsnips. I'll have to try cutting them like fries next time.
Thanks for sharing!

I've roasted loads of potatoes, but I had no idea that you could roast parsnips and eat them the same way. I love that you think my kiddo will like them- he probably will!
Hey Chef Erik! Thanks for stopping by my blog. I'm loving your blog too, some great dishes here.
I've been craving parsnip recently, in particular parsnip fries! You've just pushed me over the edge so I'll be having this tonight!
I've always loved parsnips and this is a delicious way of eating them Erik.
