Sesame Soba Noodles with Seabeans

Sesame Soba Noodles with Sea beans
  • 1 lb soba noodles cooked
  • 1 cup blanched sea beans
  • 1/2 cup shredded carrots
  • 1/4 cup chopped scallion
  • 1/2 cup sliced red bell pepper
  • 1 tbs minced ginger
  • 1/4 cup toasted sesame oil
  • 2 tbs tamari

In a large bowl toss all the ingredients. Season with extra tamari if needed. I like to eat this salad cold. You can definitely warm it up. Try snow peas, tofu, peanuts, or shitake mushrooms.

Looks really good. Sea beans are new to me too. There is no shortage of Asian markets in Seattle and I bet I can find them in one. The hunt is on!

Very nice, I try to make soba noodles every couple of weeks at the restaurant. I like them much more than udon. Do you think I can make it with seitan as well?

Amazing! This is like a tricked out version of the peanut sesame soba noodles I made the other day. The colors in this are so vibrant and the size matches the noodles.

Hi There. You pictures are amazing. It even catches the eye of a fairly hard core non vegetarian like me. I am sure they taste great. i have bought some tofu recently and love Thai food. So might try out the Thai peanut tofu

FYI: Sea beans are also called Samphire. Here are more information: http://uktv.co.uk/food/ingredient/aid/509472

Probably can substitute thin asparagus for the sea beans (or samphire).
