Quinoa with Yams and Cranberries


Quinoa with Yams and Cranberries
  • 2 cups cooked quinoa cooled
  • 1/2 cup dried cranberries
  • 1/3 cup chopped scallion
  • 1 cup roasted yams small dice
  • 1 tbs orange zest
  • 1/4 cup extra virgin olive oil
  • salt and pepper to taste

In a large bowl mix all the ingredients. Season with salt and pepper to taste. This makes a great side dish for a number of meals. For a little twist you can add golden raisins, toasted almonds, or roasted pear. Let me know how it turns out.

I LOVE dried cranberries.....this looks amazing for a light summer supper. This is on my list to make next week but I am going to use sweet potatoes instead of the yams. ooooh I am so excited...would have NEVER thought to put sweet potatoes/yams into a dish likes this. Definately adding the suggestion of almonds and golden raisins. w/some nice crusty bread this will be divine.

One can never have enough recipes for quinoa. I made a quinoa side dish with sun-dried tomatoes recently but hadn't thought of using cranberries. Great idea! I will have to try this.
