Watercress Salad with Blue Cheese

Watercress Salad with Blue Cheese
  • 1 granny smith apple
  • 1/2 red onion sliced thin
  • 1 cup your favorite blue cheese
  • 1/2 cup lemon juice
  • 1/2 cup extra virgin olive oil
  • salt and pepper to taste

In a large bowl mix lemon juice, olive oil, and onion. Let marinade for 10 minutes. Toss watercress, and apple with dressing. Season with salt and pepper. Top with blue cheese. Serve with toasted baguette.

I have not done much with Watercress. I will have to pick some up and try it again. The salad combo sounds good.

I am not to familar with watercress, but this sounds delicious.

This does sound good. I'm making a rice dish with blue cheese this evening for dinner and recently made some corn cakes served with blue cheese.
